Grilled Butternut & Biltong Salad

  1. Roast your butternut with garlic and mixed herbs. Roast at 200 degrees for 20-30 minutes.
  2. Cut your lettuce and spinach, cube out your pieces of grapefruit and cut your 🥒 cucumber.
  3. Plate this while the eggs are boiling.
  4. Once your butternut is cooked (I like mine slightly blackened), let it cool and then add the pieces to the salad plate.
  5. Place a handful of biltong in the centre on top of the salad.
  6. Cut the boiled egg in slices and add to the salad.
DRESSING
  1. Add a pinch of paprika to the yoghurt. Squeeze a little bit of grapefruit juice from the peels into the dressing.
